Excuse my ignorance, but I see this mentioned all over the site. What is an ITA?

It's an invitation to apply. After you've sent in your EOI (expression of interest) under the skilled migrant category NZIS checks it out and invites you to apply for PR (permanent residency)
The ITA is where you have to back up all your EOI claims with written evidence from former employees and qualification bodies etc
