What happens if you submit your ITA with a job offer and then get offered another job that you would rather take? Do you just inform NZIS and they change the details on your ITA and everything continues or do you have to start the whole process over again? :o

Now you are just being greedy :D
I would expect that if the jobs are substantially similar then you would just be able to inform your CO of the change with evidence of course and continue the process. Definitely wouldn't think that you would have to start over.
As this must be an unusual situation, would definitely talk with your CO before making any decisions, especially if they have already processed the ITA.
If you do decide to change the job offer then I am sure that you know that you MUST tell NZIS of this change.

Yes, you must tell your CO straight away.
You do not need to start again but they may need further information
