we are moving to nz in march on visitor visa's. How do you extend your stay for three extra months?
do you have to have a return flight ticket?
should we find a job and apply for a work visa in the first three months?
can we get our medicals and xrays straight away in march (in nz)? or should we get them done here in feb?
we are going down in jan - should/can we find a place to rent then? so we have a forwarding address or just go to a hotel?

I've tried to answer where I can, but you will no doubt have help from other members as well.
we are moving to nz in march on visitor visa's. How do you extend your stay for three extra months?
do you have to have a return flight ticket? Yes, unless you have residence/work visa
should we find a job and apply for a work visa in the first three months? An individual decsion
can we get our medicals and xrays straight away in march (in nz)? or should we get them done here in feb? The are only valid for 3 months, so it depends on when you will need them.
we are going down in jan - should/can we find a place to rent then? so we have a forwarding address or just go to a hotel? Again, personal choice, people have done it both ways. Have a look for rentals on the web? Me, I would rent when I'm there so I can see them myself.

Sorry it's not a lot of help, but most decisions depend on your personal circumstances.

Apply in NZ to immigration...as long as you still fulfill the requirements to be a tourist, ie have enough funds and an onward ticket they should extend it for another 3 months. In fact their policy allows them to extend it up to a year (total stay including extensions), one of the times they will do this is if you have a residence application pending which is likely to be approved during that time.
