My EOI was selected recently and I am awaiting the ITA paperwork. Does anybody know if you can add a partner to the ITA that wasn't mentioned on the EOI?

He was originally going to apply for his own work permit as we did not have enough proof of relationship at the time I needed to apply, but as time has gone on, we now have more than 12 months of evidence for the ITA.

AFAIK, you can add or amend any details on the ITA which is basically just a print out of your EOI.

However, I would probably give them a call to see if you can update your EOI now before they send out your ITA is more accurate. The reason being, that partner details would need a lot of additional information and it would be better if it was in the correct format instead of just appended at the back. At the very least it would make it easier for it to be processed.
