I'm pretty limited where we live so - does any body know where can I buy Amaretti biscuites. I need them for a Pear & Amaretti cheesecake recipie (for Mothers day) if no, any ideas on a relacement biscuite that could do the job?
Saves me hunting the web, thanks!

I thought I saw some in Woolworths but not sure, sorry. Would be interested in where they can be found though as I know a great recipe with peaches aswell, can you post your recipe or is it too long & complicated?

No problem Lindsay, and for any one else interested, its a great tasting easy making cheesecake.
Pear and Amaretti Cheesecake
Serves: 8
INGREDIENTS
For the base:
250g digestive biscuits
80g butter, melted
For the topping:
120g crème fraîche
3 tbsp caster sugar
100g cream cheese
1 unwaxed lemon, zest
3 tbsp lemon juice
1 can of tinned pears
120g amaretti biscuits, crushed
220ml double cream, slightly whipped
Ground cinnamon, for dusting
METHOD
To make the base, crush the biscuits into fine crumbs. Stir the biscuits and butter together. Tip into an 18cm flan dish and press down firmly. Chill in the fridge for approximately 1 hour, or until firm.
Mix together the crème fraiche, sugar, cream cheese, lemon zest and juice until smooth. Stir in the pear and crushed amaretti biscuits and finally fold in the cream.
Pour the mixture over the biscuit base. Place the pear slices over the top and chill for a couple of hours until firm.
When ready to serve, slice a large piece of cheesecake for each person, and decorate with a dusting of cinnamon and a sprinkling of lemon zest.

Sounds absolutely yummy, but the bit about stirring in the pear confused me (not difficult.....:laugh ) Did you mean some chopped up pears?
Stir in the pear and crushed amaretti biscuits and finally fold in the cream.

Yes - sorry Julie! Bits of chopped up pear, saving most of them for the top decoration.

Woolworths at Taupo did not have them - already asked, any ideas on similar alternative biscuite anyone?

Maybe you've already done this, but have you looked at the area around the deli/cooked meats section in the supermarkets? They sometimes have a stand full of various imported bits and pieces ranging from cheeses and dry goods through to tinned and bottled goods.
One thing I missed in NZ was Dolmio's (or whoever's) Bechamel sauce when I made lasagna. Only 'cos I was too idle to make my own !!
We have both Amaretto biscuits and Dolmio's Bechamel sauce her in Melbourne, so I suppose that alone was worth the move...:laugh

Maybe you've already done this, but have you looked at the area around the deli/cooked meats section in the supermarkets? They sometimes have a stand full of various imported bits and pieces ranging from cheeses and dry goods through to tinned and bottled goods.

I think I saw them in our local deli at Xmas time .....
I think I've also seen them in the odd coffee shop, but they might think you a bit odd if you went in and bought a load then left again!

Here's the peaches with Ameretti buscuits, it's an Annabel Karmel one for toddlers but lucky for me DD didn't like it so I got to eat 2 :D
2 large ripe peaches stoned & sliced
25g/1oz crushed amaretti buscuits
125ml/4 1/2 fl oz creme fraiche
1 heaped tablespoon brown sugar
Place sliced peaches in shallow oven proof dish & sprinkle with the amaretti buscuits. Cover with teh creme fraiche then sprinkle over the brown sugar. Place under preheated grill for about 6 minutes until golden.
So simple & so tasty, we made them in ramakins & they were lovely

Mission accomplished :clap - all sorted and ready to make cheesecake. I got my Amaretti biscuites at Taupo @ The Merchant, its well worth a visit to an outlet as the place is full of edible delights that would go a down a treat at xmas or special occasions.
