Does anyone have an opinion on which is the best bank in NZ to go with?

Also which is the best way (cheapest ideally) to transfer money from the UK?

PS we're in the process of selling our house, would it be worth tranferring the money now or waiting until we found a house we wanted to purchase?

Yes there is another thread regarding banks of choice.
For transferring money, you are not necessarily looking for the cheapest way to transfer money because you also need to convert your currency into NZ dollars. So what you are really looking for (I assume) is to get the best deal e.g. get the most NZ dollars for your money.
One of the simplest, safest ways is to find a NZ bank that also has a 'branch' in the UK so can transfer the funds for you. For example, your money stays in your own account from your current UK bank to ASB in London and then onto ASB in NZ where they give you a very good exchange rate (for banks).
You may get a slightly better rate by using a company such as xe.com.
As for when to move your funds, that's a difficult call, you need to take interest rates, tax free exemption and exchange rates into account before you can make a good decision. Of which the exchange rate is the most difficult as it is particularly low at the moment, so you won't get as much as if you wait (and it goes back up again).

Yep, another vote here for HiFx, got a much better rate than anyone else was offering at the time
