Here is a list of things that need to be done by many prospective university students. Feel free to augment the list. And if anybody knows how to do tables in this forum, please tell me. I've messed around unsuccessfully for about 30 minutes now.

Student visa (http://www.immigration.govt.nz/nzis/operations_manual/5827.htm) - Requires offer of a place.
Guarantee of accommodation (http://www.immigration.govt.nz/nzis/operations_manual/5811.htm)
Medical and Chest X-ray Certificate Health Requirements Leaflet (see NZIS 1121 PDF) Good for 3 months.
Police certificates (http://www.immigration.govt.nz/migrant/general/formsandfees/formsandguides/policecertificate/uv/usa.htm) Good for 1 year. Request the police certificate three months prior to lodging their application for a residence visa or permit.
Evidence of funds - NZ$10,000 per year. Evidence of funds may be in the form of cash, travellers' cheques, bank drafts, or a recognised credit card with enough credit.
Ability to leave (http://www.immigration.govt.nz/nzis/operations_manual/5813.htm) - Sufficient funds to purchase a ticket
