I can't remember where exactly I stumbled across it but I found a nifty link that lists rentals, home exchange and house sitting for people going on sabbatical worldwide. There were house and apartment (is "flat" the right term?) listings I did a quck search with just "New Zealand" selected as the coutry I was interested in and got 16 possibilities.
