If you are going to NZ on a working visa rather than PR do you need an onward flight as per a visitors visa, or can you just by one way?

General rule of thumb is if the visa is for 12 months or more then you don't need an outward flight - as you can't actually book flights more than 1 year into the future.
To be sure, you need to check what it says on the visa which should state "outward passage waived" to mean no return flight needed.
If you are on a normal visa then you will need to prove that you have sufficient funds to leave (not sure that they bother checking this too much though).
