I've scoured the local supermarkets for processed chestnuts with no luck. I'm looking for either the pureed stuff in a can or whole. Any suggestions where I might find some?
I've just come across an old recipe of mine for a wicked chocolate mousse cake where this is an important ingredient & I'd love to do this for my kiwi friends. Anything to beat the delicious sticky date pudding they lavish us with.
Thanks in advance.

Don't know about where you are down in Kapiti, but in Auckland I buy chestnut puree in cans from New World. It's a French brand in a white and green can, if that helps.

Looks like this: http://fantes.com/images/12134chestnuts.jpg

Yep that's the stuff I used to get. I'll look closer at New World then. Thanks a bunch for your quick reply.

That's Puree de marrons... anyone seen creme de marrons? It's the sweetened stuff, and I could eat a whole tin of it, mixed in equal parts with plain greek yoghurt mmmmmmmmmmm ::D :D :D

Creme de marrons is idea very tasty, remember taking a few jars with me when doing the GR20 walk in Corsica a few years ago. That and goats cheese and characuterie kept me going.

Tea Drinker: It's a different one given to me by a wonderful elderly french woman in France several years ago. I have Hugh's book & did look up the recipe you mentioned & it's very similar.
Timbo: Thanks a lot for that!
Chestnuts are so versatile & particularly this time of year for bulking out & flavouring casseroles.
