If I was to gain residency as a skilled migrant due to being a secondary school teacher, would I have to actually work as a teacher once over there?

Only if you use a job offer as part of your application, to gain points. Otherwise, no. But if you don't have a job offer, if I recall correctly, you won't get points for skills, so your current job is irrelevant. I might be wrong about that.
If you do use a job offer to gain your PR, then you must work at it for at least 3 months.

I think you can apply for bonus points in an area of skills shortage (and I believe 'education' is in that list). But in order to do so you need an NZQA assessment of your teaching qualification when they are verifying your EOI points.
