If a person gets a job offer and uses this for EOI, PR application, once PR goes through how long do you need to stay at that position for? Or, once you get PR, can you basically work or do anything you'd like?

if you use a job offer to gain PR i think there is a section 18(?) in the visa that says you have to work in that job or one similar for 3 months, if you didn't need a job offer to get PR, you are free to do as you please.

Yep, we had to start work within three months of arriving, and stay continuously employed for a minimum of three months, after which we had to send the passports off to the immigration people to have the conditions removed from the visas. From memory, the jobs didn't necessarily have to be the ones which we used when applying for the visas, but did have to be similar and match the original in terms of 'merit', i.e. must still be on the skills shortage list and would still have led to us getting visas in the first place.
