Okay, I've tried searching, but am confusing myself further, so I'm hoping someone can assist.

First off - I'll be moving to NZ on a Skilled Workers Visa - and the only thing I don't have checked off on my list is the "Evidence that I'm suitably qualified to carry out the position offered." This is the position that I've held for the past 8 years, do I simply have my current boss write a letter to that fact? I believe it's mentioned in my offer of employment, but I'm on such a short timeline that I want to make my relevant work experience abundantly clear for them.

Second - OH will be coming with me & is applying for a WV as well - however, he's travelling on the basis of my company's sponsorship (no employment yet). Does he fill out the same application that I do for a Skilled Work Visa, or is there another one he has to complete? I'm a little unclear on the requirements (if they differ) for what he needs to do to get a work visa.

For the second point you'll need this form for you OH

in addition to, I think, the same forms that you fill out. Your OH should be awarded a general WP the same length as yours.

No real idea on the first question though. It may be a good idea to get a letter from your current boss if it isn't too difficult.
