A daft question: we both need to have the full assessment done by NZQA. Can we send our documents in a same courier bag or do we need to post each person's documents separately? How will they return them, separately or together?

I called NZQA this AM and they were very helpful, so I'd suggest you do the same. At a guess then put them in two separate envelopes inside a giant courier bag, but then expect them to send them back seperately (ie 2x $38 fee).

I sent ours together (as suggested above in separate envelopes), but they returned them separately.

Just got an answer from NZQA: must send them separately so that the papers are not mixed.
