I would not personally bother to ship either of our cars as they are well past their sell by date.
Have you looked into spares availability and servicing for Fiats in NZ?
I just found this for a quick price comparison;

If you bring it you might find the resale value is less than it should be when you eventually come to sell it as the speedo will be in miles not kms.
Also, will you have to change the radio? If so that's another expense to add to the list (even if a minor one - they all add up).

Bring it it would be a rarity here, and a an instant classic. Having said that you would of course need to develop the interest in it to make it a classic.
I only say this because selling it in the UK will cause you to loose a fortune so you may as well pay the extra £1500 and bring it. Then again you do need to investigate the costs of legally getting it into the country once you have got it here.
Why did you buy a Fiat anyway?
If you could find a Fiat 131 Mirafiori twin cam that would be worthwhile importing.

We had a Renault which we brought from the UK. No air Conditioning.
I didn't realise until I replaced it with a NZ car (imported) with AC that I found out what I had been missing.
Like you say. In the summer you do sweat like a POAS without it.
