OK I know it is only June, but among other things, we found NZ Christmas Pudding for sale at our local Countdown last week.

Well as people were talking about the mid-winter idea of Chistmas here in NZ, we joined in the spirit and bought one. Having eaten Sunday lunch we stuck it in the microwave (three times before it heated up ) and turned it out onto a plate, expecting ....well Christmas Pudding.

What we got was something that looked liked a sponge pudding with some toffee like sauce on top that, while testing OK, it tasted nothing like Christmas Pudding.

Was this CP as NZ knows it ? If so did anyone pack a good Christmas Pudding recipe in the container and if so can we have a copy in time for the 25th December bbq !!!

Sounds like Xmas pud as hubby would like it, he hates the fruit ones, but it is a bit strange?

We had a Christmas Pud for our first NZ Christmas BBQ.

CP and brandy butter is one of my favourite Christmas things, but even I found it a bit difficult to get enthusiastic about it when the temperature was in the high 80s...

Make one to eat soon, but for Christmas the best advice is that given to a friend of mine by an Indian colleague:

"When in Rome do as the Romanians" (sic)

I usually get a tub of good quality ice cream something like french vanilla or whatever, slightly melt it, then stir in all sorts of yummy preserved fruit and nuts etc, then put it back in the freezer, that goes down very nicely. When the temps go up you dont feel like heavy CP.

nah.......Christmas wouldnt be Christmas without a good PROPER pudding and brandy sauce!
I'm the only one who likes it in our house though so a whole one lasts me months!

Christmas Cake Recipe


Ingredients:
1 cup of water
1 tsp baking soda
1 cup of sugar
1 tsp salt
1 cup of brown sugar
lemon juice
4 large eggs
nuts
1 bottle Vodka
2 cups of dried fruit

Sample the vodka to check quality.
Take a large bowl, check the vodka again. To be sure it is of the highest
quality, pour one level cup and drink. Repeat . Turn on the electric
mixer.

Beat one cup of butter in a large fluffy bowl.
Add one teaspoon of sugar.
Beat again.
At this point it's best to make sure the vodka is shtill OK.
Try another cup .... just in case Turn off the mixerer.
Break 2 leggs and add to the bowl and chuck in the cup of dried fruit.
Pick fruit off floor.
Mix on the turner.
If the fried druit gets stuck in the beaterers pry it loose with a
drewscriver.
Sample the vodka to check for tonsisticity.
Next, sift two cups of salt. Or something. Who giveshz a s***.
Check the vodka.
Now shift the lemon juice and strain your nuts.
Add one table.
Add a spoon of sugar, or somefink. Whatever you can find. Greash the oven.
Turn the cake tin 360 degrees and try not to fall over.
Don't forget to beat off the turner.
Finally, throw the bowl through the window, finish the vodka and kick the
cat.

Some friends of ours have been out here some 20 odd years & they say they never feel like Xmas dinner in summer, so they have it in Winter - in July!!! Maybe that's why they've got Xmas puds in the shops?! :laugh
