I found this site:
http://www.sumnertoferrymead.co.nz/canterbury_picnic_spots.htm
with a list of someone's picnic spot suggestions in the canterbury region.

Here's a sample, it's quite a long list...
BIRDLINGS FLAT

Banks Peninsula 45km from Christchurch along Slate Highway 75. At the foot of Lake Forsyth. Travel on the Christchurch-Akaroa highway through Motukarara. The Birdlings Flat turnoff is on your right just before Lake Forsyth. A must visit for stone or pebble collectors, watch the surf as it can catch the unwary. Do not attempt to drive your car on the shingle stick to the formed roads.

CAMP BAY

Banks Peninsular 39km from Christchurch, on the south side of Lyttelton Harbour. The beach may be approached by the main road around the harbour sealed to Purau, then by 4km of unsealed road direct to the beach. Well worth a visit to see the fauna and rock formations of this small bay.

CANTERBURY PIONEER WOMENS MEMORIAL

Summit Road at the top of the Bridle Path 8.5km from the Sign of the Kiwi travelling east or 6.5km from the Evans Pass Road and Summit Road intersection travelling west. Prior to the formation of the Sumner Road and the Lyttelton Rail Tunnel the only access to Christchurch was via this path or ship over the Sumner Bar.
