As an Indian moving out to NZ with my English wife I have a slightly off the beaten track question.

My wife and I enjoy the food of many nations. She cooks many different dishes very well (as my expanding trouser size shows)! Her enjoyment as a cook-at-home is having a cupboard full of wierd and wonderful spices, mushroom ketchup or Chinese ingredients from which she can stretch her talents. It allows us to steadily get fatter in the manner to which we've become accustomed.

I am aware that the food choices are more restricted in NZ, but are there any fervent cooks out there who can't find their little trade secrets or alternatives out there easily?

Depends on where you go. Auckland and Wellington are international enough to satisfy your taste buds. Elsewhere - it is a matter of luck. Sometimes, funny things happen, even if you are not looking to try anything exotic.

spices in abundance in the major cities. plus oriental supermarkets. don't know about outside the cities though.

mushroom ketchup is a tricky one. i use this a lot and it can be difficult to find even in the uk. its manufactured here by geo watkins and is imported into NZ by interlink foods (www.interlinkfoods.co.nz), but ONLY at christmas - its included in their christmas brochure. personally i'll probably try and find a couple of bottles each christmas and make do with that during the year. otherwise i'll be getting the parents to send it over!
