Road cycling is very well catered for in New Zealand, and you'll find more mainstream bike shops like Avanti, as well as smaller, independent suppliers.
You don't state what sort of road bike you're looking for (entry level, ethusiast, high-end), or where you'll be based.
The biggest national chain/store is Avanti, which stocks (typically) Specialized and Avanti models (Avanti is a NZ/Oz brand, excellent components, excellent value for money).
Other smaller independent stores will offer all the usual brands - Cannondale, Cervelo, Pinarello, Trek, etc. etc.
Prices vary, but I've found them to be much cheaper than the same models offered in the UK (often by several thousand dollars).
Avoid stores like Bike Barn like the plague if you're really serious about your bike - they're fine for accessories but have heard MANY bad tales about their mechanics.

I'm not sure where you're coming from, but it sounds like you may be coming from either the US or Canada. Everything is insanely expensive here compared to North America. Of course, shipping things is also insanely expensive... For a high value item like a road bike, though, you're almost certainly better off buying in North America and shipping it.
Side note: The road surfaces here are garbage. They use chip seal on something like 95% of their roads. It really destroys that smooth flying feeling you get at speed on asphalt on a road bike. If you're considering whether to get a model with a bit of vibration dampening built in (carbon forks or something? I'm new at this biking thing) then it may be worth it.

Can anyone recommend a good local bike shop / mechanic in Wellington? We're bringing a Pinarello and a Trek road bike with us and 2 Trek mountain bikes and given how rubbish I am at looking after them we're bound to need a good mechanic pretty quickly!

I'm from Belgium and ride a couple of hundreds of kilometers a month (if the weather allows it)
currently i ride a scott road bike and a Granville Mtb.
