I am selling up and just coming over on a holiday visa. I am in touch with a print recruitment agency he tells me I should have no problem obtaining a job offer with my qualifications, after which I can apply for a skilled migrant visa while over there. What I want to know can I just book one way flights.

I'm pretty sure that they are gonna want to see a return flight if you are only coming over on a short term visa. Maybe you can purchase a changable date return and use it for a visit home once you have a more secure hold in NZ.

Fraid not - you need a residence visa to be able to do that!
An alternative is to book a flexible or refundable return ticket, but either way - immigration will flag you if you do not have an onward ticket. In fact I think they may not even let you on the plane at your end without one.
Do it anyway though! Its a great idea, and you seem to have a bit of get up and go if you are gonna do that!
