As you're from Houston the Antarctic centre might be fun for you!! :D
Anyway, off the top of my head....
There's the gondola (on a clear day) with amazing views across Canterbury.
How about punting on the Avon?
Or a surf lesson in Sumner?
A walk round Hagley Park and Botanics?
Tranzalpine rail day trip (stunning on a clear day!) across the Alps. $49 one way if I remember - the return trip is a day trip.
The Arts Centre Market on a Sunday?
As for food, depends on your tastes. For an experience try Tepanyaki at the Mt Fuji, or amazing Asian fusion at Indochine. Perhaps take a local winery tour for lunch? "Taste" at Riccarton Bush is lovely and the Japanese (can't remember name) opposite the casino is yummm.

We stayed at Warner's recently! I loved it, but then I love old things, the rooms were huge, nicely furnished and clean. The enormous bed was the hardest I'd ever slept on though. OH didn't like it much it, but then he's a stainless steel and glass kinda hotel man.
Their breakfast was excellent, set you up for the day.
We've eaten at Indochine twice now with Moorf and Woz. It's very, very good and the cocktail menu is fab. We won't go into how much of our bill was drinks though. ;)
http://www.indochine.co.nz/ there's a rumbly stomach warning on their site menu though. :D
We enjoyed Akaroa, a really nice drive out if you've got a car but I'll let the CC people carry on from here.

the Botanical Gardens is worth a walk through and the Antigua Boatshed does a good lunch, lovely sitting there watching the people messing about in the punts and canoes.
Museum is also worth a look in, don't do what we did though the first time we went, we thought there was only one floor and missed out on half the museum. In the evening its worth a walk down the strip on oxford terrace and Manchester street has some night life too if thats what you are after. the Bog (irish pub) and the Dux de Lux have live bands some evenings too.
Christmas day I am not sure what the situation will be regarding restaurants etc.
