What are the octane levels available in the gas in NZ? Is it all unleaded, or is leaded still available?

Octane - 91 , 95 , and 97/98 RON

I suspect judging by when you posted your question that you may be in the US? if so you need to convert to US numbers - approx conversions below
EU/NZ/OZ/CAN 91 octane = US 88 octane
EU/NZ/OZ/CAN 95 octane = US 91 octane
EU/NZ/OZ/CAN 98 octane = US 93 octane.

IIRC Leaded is NLA
