I am going to stick my neck and and say consider starting when they want you to, especially if not doing so means losing the visa. most working visas tied in with a job offer are only relevant to that job, and the complications of starting over again would be far greater than the hassle of starting work a couple of days earlier than you would like. I am assuming that they have already held the job open for you for a while.
The jet lag should be settling down, and I am sure they will understand if you are yawning by five o'clock. the sorting out, well there is yourself and a partner so that can be shared between the two of you., I would be very surprised if they minded you making a few calls or finished an hour early on occasions to sort stuff. To be honest the "sorting out " phase can go on for a month or more.
Both Pete and I have done the long haul trip about 5 times both ways and we usually start work the next day, and I know that my daughter and son in law went out in January and he started work 2 days later, so it can be done. Just go for it, it all works out in the end.
